The Zorba kampong Edition

Sambal has always been the heart of the kampung table. Not a side note. Not a garnish. The thing that completes the taste of a dish — a slow grind of chillies, belacan, and patience that cannot be rushed. Present at every meal, carried in the hands of those who knew that the best things take time.

That tradition is quieter now. But it has not disappeared.

This National Day, Zorba pays homage to the sambal of our past — not as a condiment, but as a craft. Made in-house, the unhurried way, and brought to a table by the Singapore River where two cultures meet without apology.
